Eighty Cloves of Garlic
(8 servings) 4 tablespoons butter 1 teaspoon dried thyme 2 tablespoon olive oil 2 teaspoons salt 2 chickens, cut up ½ teaspoon freshly ground black pepper 80 garlic cloves, unpeeled 4 tablespoons lemon juice Preparation: In a large Dutch oven, melt the butter in the olive oil. Add the chicken pieces and cook until golden on all sides (approximately 5 to 10 minutes). Remove all but 2 tablespoons of the fat. Add the garlic and stir until it is coated. Sprinkle garlic/chicken mixture with the remaining ingredients and add ½ cup of water. Cover tightly and bake for 1½ hours. |
